No Dairy Sour Cream

Ingredients • 1 cup raw cashews, soaked overnight • ¼ cup plus 2 Tbsp juice of 1 lemon • ¼ tsp sea salt • 1 tsp nutritional yeast • ½ cup water

Instructions 1. Place all ingredients into blender 2. Blend on high for 5-7 minutes until very smooth and creamy. (You may need to scrape the sides down from time to time) 3. Transfer to a mason jar or other airtight container. 4. Can be refrigerated up to 2 weeks!

For added flavor, garnish with fresh scallions or cilantro!
